Vegan Protein Pancakes / 41g Protein

Hey guys,

I'm so happy to share this recipe with you. It's just the perfect breakfast. It just blows my mind with its 41g of protein, 80g of carbs and just 6g fat! Really, go go go make it, feast and then thank me later ;)

Vegan Protein Pancakes 

serves 1-2


  • 1/2 cup oats 
  • 1/2 cup spelt flour 
  • 30g (1 scoop) vegan protein powder (I used NutriPlus Coconut)
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda 
  • 1/2 cup soy milk (or almond milk)
  • 2 tbsp apple sauce 
  • a pinch of vanilla
  • 2 tbsp - 1/4 cup water (depends on how runny you like it) 


  1. In a food processor, combine oats, flour and protein powder and pulse until they come together like a flour. 
  2. Add in baking powder and baking soda and pulse again. 
  3. Add remaining ingredients and process until combined.
  4. Heat up a large pan and cook your pancakes (I didn't use any oil), about 1/3 cup of batter per pancake. 
  5. Top with vegan yogurt, berries and passion fruit. 
  6. Enjoy!
