My Gratitude Journal - Free Download

Hey guys!

Today I'm bringing you my first freebie and it's very close to my heart. I'm sharing with you my own gratitude journal. It includes a page to use in the morning to set intentions and one for the evening to recap your day and create goals for the next day.

But what is it exactly, a gratitude journal? And why should you use it?

It's basically the adult form of your teenage diary. I find it really hard to write a page about my day every night, and when people do that it's very often about complaining about what happened to them each day and maybe expressing their worries. If you know anything about the law of attraction, your alarm bells should be ringing.
By writing about the negative and hurtful moments, you will actually attract exactly these moments into your life.
And that's not really what you want, I guess.

Vegan Protein Pancakes / 41g Protein

Vegan Kitchen Staple: Tahini Rawnola

Hey guys how is it going? I'm writing this on a beautiful Sunday afternoon, looking outside of my window into a small little park. Berlin is seriously the most beautiful city during the summer - I'm falling in love with it again every year.

Vegan Coconut Protein Cupcakes w/ Coconut Frosting

Hey peeps,

let's talk cupcakes. They haven't been a big thing in Germany when I was little (okay that sounds like I'm old haha). I think the first time I actually tasted and made them was about 10 years ago when I did some serious research about what fancy thing to do for my birthday party. I died the frosting blue and pink and green it they were delicious.

Vegan Berry Marble Smoothie with Soy Yogurt

Hey guys,

I've been really into these cool marble smoothies and overnight oats lately. Check out my creations on my Instagram (@mangoandcocos) if you're interested! This smoothie/nice cream was my pre-workout meal and I really felt the energy that it provided! I was really crashing the workout (Did BodyPump) even though it was super hard I kept going - wooo ;)

Berries are actually SO good for you, packed with antioxidants, vitamins and fiber they seriously are superfoods. I used a mix of frozen berries, but this works with just frozen blueberries, raspberries and strawberries, too (just make sure these are sliced up because they`re quite hard to blend when they're not). I layered it with natural soy yogurt but you can use coconut yogurt, almond yogurt or soy quark as well. Make sure to put 1 tbsp of the yogurt into the smoothie as well, this makes it super fluffy for some reason!

Vegan Berry Marble Smoothie w/ Yogurt

serves 1

Ingredients

  • 1 very ripe banana
  • 3/4 cup frozen berries
  • 1 tbsp rice protein
  • 1 tbsp + 1/2 cup soy yogurt

Method

  1. Slice the banana and blend all of the ingredients but the 1/2 cup of soy yogurt in a food processor. Make sure that there are no berry bits left. Run the food processor for another 30 seconds to make sure the mixture gets really fluffy. Like clouds. I promise.
  2. Layer in a mason jar with the remaining yogurt and top with some blueberries.
  3. Enjoy!

Why I don't hate Mondays & Three Tips on How To Be More Mindful

Being probably the only person I know who doesn’t hate Mondays, today I want to give you a little reminder.
Some times the days, weeks even months or years rush by and we stand there, passively taking part but without really taking any notice of it - until it hits us. ‚What have I done in the last few weeks? I don’t remember, I guess they’ve just been normal days.‘ But then, there are moments when you feel like time stops for a little while, moments of pure bliss, joy and happiness. Now the question is: What makes these two so different?

I can’t give you the one perfect answer to this one because that would mean I’d hold the key to life lasting happiness - and I don’t. But I do want to share my thoughts on it with you.
The only ‚thing‘ that is able to make these moments be so different from each other is: You. It’s you and your consciousness that is in control. Thinking about the specialty of this moment, being aware of its rareness is what makes is unique in the first place. Without these exact thoughts it’s nothing more than a moment that just happened. Great sunsets happen every second. A child is born every second. What makes these events special is the perceiver only.

Vegan Salted Caramel Granola with Walnuts and Figs

Hey peeps,
spring has officially arrived here in northern Germany and I couldn't be happier. If there is one thing that always lifts my mood it's bright sunshine on my skin and birds singing outside. I'm writing this in front of a huge window looking into the blue sky that seems to be endless.

Protein Chia Pudding with Berries

Hey guys,

today I'm bringing you a spring inspired recipe to get you into a good mood, that will make you feel great and look great! I'm talking chia pudding!

I'm pretty sure all of you know the benefits of consuming chia seeds by now, but just to give you a little round up, these little seeds...
  • are rich in fiber
  • are rich in protein
  • contain good omega 3 fatty acids
  • are rich in manganese, magnesium and phosphorus
  • may lower the risk of heart disease and diabetes
  • improve your exercise performance

Quite impressive, right?

Cashew Coconut and Chocolate Protein Bites

Hey beauties,

lately, there hasn't been a day where I didn't snack on one of these. I love having healthy little snacks in the fridge so every time I get a craving I can easily satisfy it with good, whole vegan foods that give me energy and keep me full till lunch or dinner. These two are my favourites, cashew coconut and chocolate fudge! I'd highly recommend trying them with different nuts (like hazelnuts, to make a Nutella version or macadamia to make shortbread-style bites) and experimenting with different other ingredients, too! Use these recipes as a guide and adapt them to your likings, I'm excited to see your recreations!

Veganes Berlin - Das Rawtastic

Wholegrain Vegan Waffles - simple and oil free

Hola guys, it's me again with another ... breakfast recipe!

I'm happy you found your way here and I really you try this recipe out since it's the bomb, seriously.

I just recently started making waffles and my first attempts to get them nice and crispy seemed to fail in many ways. They weren't fluffy or crispy or anything good. But after experimenting a bit with different ingredients and measures, I can finally present you my first vegan high carb low fat and super simple waffle recipe to knock you out of your socks. Ready?

Vegan Breakfast Bowl and A Little Talk About Minimalism

Hey you lovely people,

recently and thanks to my good friend Laura I've been reading a lot about minimalism and how decluttering, prioritizing and taking a step out of consumerism may - and will - affect your life positively. Over the last few months, I realized how happy I become when I just throw stuff I don't need away, for good. I became more aware of the fact that having less stuff will make you more organized instantly. You don't even have to worry about tidying up if there's nothing to tidy up. It just feels so good looking at a white wall, a white sheet, an organized desk, a clean surface. But if it was that easy, why is not everybody living a minimalist life? I thought about the issues I had and came up with my top two reasons why people choose to live in a cluttered space with endless piles of unused stuff.

Healthy Vegan White Chocolate Overnight Oats

When I first started to make my own breakfast I was having overnight oatmeal every single day for about 6 months, no joke. Back then I made it with cows milk and curd cheese which is not how I'd recreate it today. I actually made chocolate oats every day but last night when I prepped it, I felt like making these white chocolate oats with just cocoa nibs instead. And that was a winning decision.

Raw Vegan Spiced Walnut Cookies

Hey peeps it's me again!

So lately I've been into healthy eating and working out again. Over the last few months I kinda let that slip a bit and I noticed a decrease in my energy, bad skin, loosing muscle and so on. So I decided to hop back on track and start early with my new years resolutions this time. No more heaps of hummus (but still more than I should eat, probably), tons of white bread, vegan chocolate, candy and so on. But that doesn't mean I can't have great Christmas cookies, right?

May I present you the easiest Christmas cookies ever? These take literally 15 minutes. And with just 4 basic ingredients for the base you might even have everything on hand to make them right now. You should. Really.

Oh and I've got a new marble cutting board that will be my new fave back drop!

Now into the recipe...

The Perfect Veggie Protein Bowl

Sometimes it's hard to go to uni, have a job, volunteer, workout, have friends and a relationship all at the same time and try to find time to cook healthy, nutritious food that my mind and body love. In stressful times like the weeks before Christmas, when you're rushing from one appointment to another and rarely find the time to sit down, I find it more important than ever to make sure, you're feeding your body right. Cause how can you perform at your best when the foods you eat make you feel the worst?

I just recently discovered frozen veggies. I don't know why I never considered buying a package of frozen broccoli before but somehow I just missed hopping on that wagon. Yes, I know that was extremely silly of me because frozen veggies are now what some might call "life".

There is one dish I have been making quite regularly in the last few weeks: The Veggie Protein Bowl!

There are 4 main components to it and they are so easy and literally take 15 minutes to throw together!

The Only Raw Brownie Recipe You'll Ever Need

Hi guys,

today I'm sharing a recipe with you that I've been partly making for years. It's my go-to raw brownie recipe. It's the only one you'll ever need. Once you've got this base, you can add anything into the brownies, starting with pumpkin spice over peppermint flavour, turning these into little bliss balls or cake pops, using it as a base for a raw cheesecake (check out my Nutella and Vanilla Mousse Slices), etc etc; the possibilities are endless! I hope I can inspire you today to get into the kitchen, whip up this super easy variation of the classic and get creative with what you have in your kitchen.

I topped the base with a marble-topping made out of a raw-vegan chocolate buttercream and a homemade cookie butter (click here to get the recipe).

In case you want to eat the buttercream by itself: DO IT. It's so good, I'd take a bath in it.

Winter Apple Pie Oats with Homemade Cookie Butter

Hey peeps, I'm back with another breakfast recipe (surprise, I might have to start calling me a breakfast blogger). This time, I'm presenting you an amazing flavour combination that made my mouth jiggle and my belly happy this afternoon. Wait, maybe this also counts as a lunch.

I want to tell you something: If I had to choose one 'naughty' food to eat for the rest of my life it probably would be cookie butter (or speculoos butter, however you say it) made out of these incredible delicious caramel cookies that I have been loving since the first time I tried them. So I once bought a bunch of these cookies to make a vegan 'freak' shake inspired by the lovely Naturally Stephanie and had quite a few left that were sitting in my kitchen just waiting to be transformed into cookie butter. The result was amaaaazing. Like really really good. And in combination with these Apple Pie Oats... I can't even.

Fall Morning Routine & My Favorite Superfood Açai Bowl

As the days get shorter, I also like to adapt my summer morning routine to a more calm & relaxed one; think candles, yoga and coffee.

My routine usually takes about 1-2 hours, depending on what I have for breakfast or how much time I had for my nights sleep. I know this seems like a lot (I know quite a few people who get up 30 min before leaving and rushing through everything as quick as possible) but taking this time for me in the morning has become very important. I like the feeling of having accomplished something before my "actual" day hasn't even started. It gives you the feeling of being completely in control of what you're doing. If that sounds stupid to you, try waking up 20 min earlier than you usually would this week and try it. Don't get me wrong, of course there are days when I stay in bed until the last minute and then brush my teeth while trying to do apply my mascara because I have no time, but usually, this is what I like to do instead:

My alarm goes off (I like to wake up to "More Than Ever People by Levitation") , like I mentioned earlier about 2 hours before I leave. I usually end up checking my phone right away (bad habit I know) and scroll through the messages and Instagram notifications I got during the night. Then I get up, make my bed and prep my espresso machine. While it is brewing, I take a shower and slip into some comfy clothes. I love wearing oversized t-shirts (in the summer) or sweaters (in the winter) with comfy socks.
